Effect of food preferences on salivary pH level

Summary
The aim of the study was to conduct a comprehensive evaluation of the effect of the diet of the observed patients on oral pH.
Material and methods. A questionnaire was administered to 85 patients regarding satisfaction with dental health, dietary compliance (with indication of the period of compliance), changes in the oral cavity, meal frequency and calorie control, and food preferences for certain foods. After the questionnaire, pH was measured by applying oral fluid to a litmus strip-indicator (provided there was no food intake two hours before the measurement).
Results. According to the results of the measurements, 30 patients had Ph values in the “neutral” zone. In 38 patients there was a shift of pH value to the “acidic” zone, in 17 patients – to the “alkaline” zone.
The pH values were compared with the results of the questionnaire in terms of food preferences and dietary intake and analyzed for statistical dependence.
According to the results of the conducted single-factor risk analysis of target pH deviation, it can be concluded that the three key statistically significant risk factors are frequent consumption of candy/lollipops, berries and chewing marmelade.
Conclusion. The results of the study revealed a statistically significant relationship between oral pH deviation in the groups of patients who eat candy/lollipops several times a week or more often, in the group of patients who eat fresh berries once a week or more often and in the group of patients consuming chewing marmalade several times a month or more often.
The presence of one of these factors increases the risk of pH deviation (shift to the “acidic” zone) by more than 1.6 times.
